Com chay (scorched rice), a rustic specialty but very tasty and crispy dish, is regarded as one of the proud symbols of Ninh Binh culinary art.
Com Chay (scorched rice) is not burned rice at the bottom of the pot. Rice, pork, fried beef, and vegetables including onion, dry mushrooms, and tomatoes are all used to make Com Chay. Rice is arranged in thin, round forms after it has been thoroughly cooked and allowed to cool and dry. Then, in a heated skillet, slices of steamed rice are cooked till golden and crisp.
Mushrooms, tomato, beef, pig's heart or kidney, carrot, and seasonings including pepper, red chili, fish sauce, onion, and salt are served alongside the main ingredient, steaming rice.
When clients request Com Chay, the dry rice shapes are fried till crisp, aromatic, and sizzling in sesame oil. Meanwhile, marinated pork heart, kidneys, or tender beef are stir-fried with veggies and then poured into the Com Chay. That's all there is to it, but it will leave an indelible taste in your mouth.
Goat meat and Kim Son wine are the perfect accompaniments to this dish. The crispness of yellow scorched rice, the fatty taste of beef, and the freshness of vegetables in each bowl of Com Chay awaken the taste buds of diners.
