Egg coffee is an unique Vietnamese drink which is traditionally prepared with egg yolks, Robusta coffee, condensed milk and sugar. Egg coffee is made by beating egg yolks with coffee and sugar, after that we will extract the coffee into the half of the cup, finally we follow by a similar amount of egg cream, which is prepared by heating and beating the yolks.
Nguyen Van Giang brewed the first cup of egg coffee in the early twentieth century. He used to work as a bartender at the 5-star Sofitel Legend Metropole hotel, which was ruled by the French. The western cappuccino had been transformed into 'egg coffee' using familiar components by Giang's great-grandfather.
A cup of egg coffee is often a small, short cup that fits in the palm of the hand.
